Homemade Cola
  1. Add water, citrus zests, cinnamon, coriander, nutmeg, and ginger to a saucepan.

  2. Simmer uncovered for about 30–40 minutes until reduced by about half.

  3. Strain out the solids.

  4. Return liquid to the pan, add sugar, and gently heat until dissolved.

  5. Remove from heat and stir in vanilla.

  6. Let cool and store in the fridge (keeps ~2 weeks).

  7. For every cup of sparkling water add 3 tablespoons of cola syrup.
