Blend together the ingredients for the silken tofu cream until completely smooth, set aside.
Cook the chopped red onion in an oiled pan over medium to high heat until soft. Reduce heat to low, add in the minced garlic, sun-dried tomatoes, salt, and cook for another minute.
Then add in the half of the silken tofu cream, tomato paste, lemon juice, splash of pasta water and chopped basil. Stir in your cooked pasta and combine everything together.
Top with black pepper and chilli flakes if you wish.
