Fluffy Gingerbread Pancakes
  1. Begin by adding the flour, sugar, baking powder, baking soda, salt, ground ginger, cinnamon, nutmeg, and ground cloves to a bowl. Mix well with a whisk.

  2. Next add the molasses, milk, melted butter, vanilla, and egg to the same bowl. Mix well until just incorporated. There will be some lumps but this is okay.

  3. Use a large spoon to pour the batter into a well oiled pan, creating round pancakes. When little bubbles appear on the surface flip the pancake. Continue cooking for another couple minutes until the other side is cooked. Repeat until all the batter is used.

  4. Serve with fresh fruit, syrup, and powdered sugar. Enjoy!
