Cottage Cheese Mashed Potatoes
  1. In a blender, purée the cottage cheese and roasted garlic until very smooth.

  2. In a medium pot, cover the potatoes in 2 inches of cool water and season with a heavy pinch of salt, then bring to a simmer over medium-high heat. Cook until tender, 10 to 12 minutes.

  3. Drain and return the potatoes to the pot. Add the cottage cheese mixture and mash until well incorporated.

  4. Taste and adjust the seasoning with salt and pepper, then serve.
