BBQ Tofu Chopped Salad
  1. To a medium pan over medium-high heat, add the olive oil and tofu pieces. Stir every few minutes until the tofu is golden brown on all sides, about 10 minutes. Season with salt and pepper to taste. Reduce the heat to a simmer and pour in the barbecue sauce. Stir until it thickens, then remove the pan from the heat and set aside to fully cool.

  2. To a large salad bowl, add the lettuce, black beans, cherry tomatoes, red onion, avocado, and corn.

  3. Once the tofu has cooled, add the tofu and sauce to the salad. Drizzle as much of the ValleyGirl Ranch Dressing as you like over top. Add additional barbecue sauce, if desired. Toss to combine, then enjoy fresh.
