Kingfish Crudo With Pink Grapefruit
  1. Peel the grapefruit, making sure you remove all the white pith.

  2. Segment the grapefruit over a bowl to collect any juices.

  3. Using a sharp knife, thinly slice the kingfish.

  4. Thinly slice the radish into rounds.

  5. Thinly slice the green chilli.

  6. Arrange the fish, grapefruit, radish and chilli on a serving platter.

  7. Spoon over dressing.

  8. Top with coriander and mint leaves and drizzle with extra virgin olive oil.
