Chipotle Chicken Tacos With Cheesy Charred Tortilla, Guacamole, And Pico De Gallo
  1. Cut and mix all ingredients for pico de gallo

  2. Make the guacamole and refrigerate until ready to use

  3. Dice chicken thighs

  4. Add all chicken seasonings, mix and marinate for 20 minutes if possible, otherwise use right away

  5. Heat a skillet with 1 tablespoon of oil and cook chicken in small batches, searing for about 6 minutes until cooked completely

  6. Char tortillas directly on heat to get black marks

  7. Add mozzarella or Chihuahua cheese to a skillet, place charred tortilla over cheese, turn while cooking and flip over

  8. Assemble tacos by adding guacamole, chicken, and pico de gallo

  9. Top with chipotle sauce
