  3. Stir in taco seasoning, diced tomatoes with green chilies, and beef broth. Simmer for 3-4 minutes to combine flavors.

  4. Add cooked pasta to the skillet with the beef mixture. Stir until evenly coated.

  5. Lower heat to medium-low. Stir in cheddar and mozzarella cheeses until melted and creamy. Add sour cream and mix well.

  6. Divide into bowls and top with optional toppings like cilantro, avocado, or jalapeños.
