Yangzhou Fried Rice
  1. Break up cold rice, remove clumps

  2. Cut all ingredients small, uniform size

  3. Have everything ready before starting

  4. Scramble eggs, remove from wok

  5. Stir-fry proteins until just cooked

  6. Add vegetables, cook briefly

  7. Add rice, break up completely

  8. Add seasonings around edge of wok

  9. Return eggs, crumbled

  10. Toss everything thoroughly

  11. Finish with sesame oil
