Delicious Rye Squares With ‘bread Spice’
  1. Make the dough by pouring the water in a large bowl.

  2. Add the yeast, salt, syrup, and whole wheat flour. Mix well.

  3. Add the white flour and mix again.

  4. Finally, add the rye flour and mix to a dough.

  5. Cover and ferment for 30 minutes.

  6. Fold and ferment for another 30 minutes.

  7. Roll the dough out to a rectangle measuring slightly more than 40cm x 30cm.

  8. Cut the dough into 18 equal pieces measuring on a non-stick paper lined baking tray.

  9. Cover and proof for 1.5 hours.

  10. Spray with water and bake at 200C fan on or 220C fan off for 11-13 minutes.

  11. Leave to cool down and make yourself an awesome sandwich.
