Raspberry Mousse Cheesecake
  1. Preheat oven to 350 F.

  2. Combine crust ingredients well and press into a 9’ spring form pan.

  3. Blend cream cheese and sugar until smooth.

  4. Add eggs and vanilla and pour into crust.

  5. Bake 60 minutes.

  6. Chill.

  7. For mousse, sprinkle gelatin over water and let sit for 3 minutes.

  8. Microwave 15 seconds; then quickly mix into preserves.

  9. Reserve 1 cup whipped topping and fold in jam with remaining topping.

  10. Spread over cheesecake and chill.

  11. Serve, topped with remaining whipped topping and raspberries.
