Mediterranean Lentils And Rice
  1. Cook the basmati rice according to package directions and set aside.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add sliced onions and cook, stirring occasionally.

  4. Pour in water and honey and continue cooking until onions are golden and caramelized.

  5. Add garlic, paprika, coriander, cumin, cinnamon, turmeric, and red pepper flakes and stir until fragrant.

  6. Add lentils and season with salt and black pepper.

  7. Reduce heat and simmer gently while stirring.

  8. Fold in the cooked rice and fresh herbs.

  9. Taste and adjust seasoning as needed.

  10. Serve warm with lemon wedges and optional Greek yogurt.
