Use electric beaters to beat thickened cream, sour cream and icing sugar in a bowl until soft peaks form. Transfer to a large bowl (see tip, above).
Add marshmallows, strawberry, pineapple and coconut to the bowl and mix until well combined. Gently fold through mandarin. Spoon half the fruit mixture into eight 330ml serving glasses. Top with half the meringue. Repeat layering with the remaining fruit mixture and meringue. Top each glass with a cherry (if using), to serve.
