Self Saucing Chocolate Malt Mug Cake
  1. Place a microwave-safe mug on your scales

  2. Measure the butter into the mug and melt in the microwave for 30 seconds

  3. Weigh in the sugar, flour and cocoa powder and add the salt

  4. Mix together, then add the boiling water and mix again until you have a smooth batter

  5. Smooth out the batter until flat

  6. Sprinkle the sugar and cocoa powder in an even layer over the cake mix

  7. Gently pour over the boiling water, trying to cover the sugar and cocoa without mixing the water into the cake batter

  8. Swirl the mug to distribute the water more evenly

  9. Microwave on low for 1-5 minutes, depending on the power of your microwave

  10. Serve with a big scoop of vanilla ice cream when the sponge has risen slightly and is firm to the touch with fudgy, saucy edges
