In a mixing bowl, combine the yeast, sugar, and 2 tablespoons of flour.
Add the lukewarm water, whisk with a hand whisk, and cover.
Let it sit until the yeast activates and becomes frothy (about 10 minutes).
Once the yeast is ready, add the remaining flour, salt, and olive oil.
Knead the dough until smooth.
Cover it tightly to prevent air from getting in, and let it rest until it doubles in size, about 25 minutes.
After the dough has risen, deflate it and place it on your work surface.
Lightly flour it and roll it into a round shape to fit your baking tray.
Slice the dough slightly, spread the garlic sauce over it, place shredded mozzarella or cheese along the cut lines, and add olive slices.
Bake on the lowest rack of the oven (without preheating) at 180°C (with fan) until the cheese melts and turns golden brown.
