Cherry Pie Overnight Oats
  1. Combine the pitted cherries and ½ cup water in a medium saucepan; bring to a boil over medium-high heat. Cook, stirring occasionally, until the cherries can be gently mashed with the back of a spatula and the mixture is reduced to about 2 cups, about 20 minutes. Remove from heat; stir in 2 teaspoons lemon juice. Transfer to a medium bowl and let cool to room temperature, about 30 minutes. Cover and refrigerate until ready to assemble (and up to 4 days).

  2. Meanwhile, combine 2½ cups milk, 2 cups oats, ¾ cup yogurt, 3 tablespoons chia seeds, 2½ tablespoons maple syrup, 1 tablespoon vanilla and 1 teaspoon cinnamon in a large bowl; whisk to mix well. Cover and refrigerate until thickened, at least 8 hours or up to 4 days.

  3. Spoon ½ cup oat mixture into each of 4 (16-ounce) jars. Top each with ¼ cup cherry mixture. Repeat the layers with the remaining oat mixture and cherry mixture.
