Cook sausage, ground beef, onion, and garlic until browned.
Add tomatoes, tomato sauce, tomato paste, water, sugar, herbs, and spices. Simmer 1 ½ hours.
Boil noodles until slightly firm. Rinse with cold water.
Combine ricotta, egg, parsley, and salt.
Spread 1 ½ cups meat sauce in dish. Add 6 noodles, half the ricotta, some mozzarella, 1 ½ cups meat sauce, and Parmesan.
Repeat layering.
Add remaining mozzarella and Parmesan.
Cover with foil and bake 25 minutes. Uncover and bake 25 more.
Let stand 15 minutes before slicing.
