Tzatziki Chicken Salad
  1. Wrap grated cucumber in a paper towel and gently squeeze out excess moisture

  2. Add cucumber, yogurt, dill, lemon juice, garlic, salt and pepper to a bowl and combine

  3. Shred or chop chicken into bite size pieces and add to mixture with red onion

  4. Serve on pita bread with fresh tomatoes, with crackers or on lettuce.
