Slice the 3 large yellow onions
Heat ⅓ cup olive oil and 3 tbsp salted butter in a large pan
Add sliced onions and cook on medium heat, stirring occasionally
Add 1 tsp sugar and 1 tsp fine sea salt to help caramelize the onions
Continue cooking until onions are deeply caramelized and golden brown
Season caramelized onions with 1 tsp white pepper, 1 tsp garlic powder, and 1 tsp onion powder
Stir in 2 tbsp chili crisp
Cook 1 lbs spaghetti according to package directions and reserve 2-3 cups pasta water
Mince 6-8 cloves garlic and add to the caramelized onions
Stir in 8 oz creme fraiche
Add cooked spaghetti to the sauce
Add reserved pasta water as needed to reach desired consistency
Finish with 2 tbsp salted butter
Top with 40 grams freshly grated parmesan and chopped parsley for garnish
