Caramelized Onion Pasta
  1. Slice the 3 large yellow onions

  2. Heat ⅓ cup olive oil and 3 tbsp salted butter in a large pan

  3. Add sliced onions and cook on medium heat, stirring occasionally

  4. Add 1 tsp sugar and 1 tsp fine sea salt to help caramelize the onions

  5. Continue cooking until onions are deeply caramelized and golden brown

  6. Season caramelized onions with 1 tsp white pepper, 1 tsp garlic powder, and 1 tsp onion powder

  7. Stir in 2 tbsp chili crisp

  8. Cook 1 lbs spaghetti according to package directions and reserve 2-3 cups pasta water

  9. Mince 6-8 cloves garlic and add to the caramelized onions

  10. Stir in 8 oz creme fraiche

  11. Add cooked spaghetti to the sauce

  12. Add reserved pasta water as needed to reach desired consistency

  13. Finish with 2 tbsp salted butter

  14. Top with 40 grams freshly grated parmesan and chopped parsley for garnish
