Preheat oven to 425°F (220°C)
Cut Lotatoes into ½-inch cubes
Spread on baking sheet, season with salt and pepper, lightly spray with cooking spray
Roast for 25-30 minutes, flipping halfway, until golden and crispy
Add ground beef to pre-heated pan on med-high heat to sear it
Cook until browned, mix in Worcestershire, yellow mustard, salt, and pepper
Once browned, reduce heat to low, smash beef with a spatula and add double stacked slices of cheese on top (2 slices of cheese per serve)
Cover the pan with a lid to melt the cheese then remove the lid and turn off the heat
In a bowl, combine light mayo, low-sugar ketchup, yellow mustard, and garlic
Divide roasted Lotatoes and each portion of cheeseburger beef between 4 bowls
Top with chopped pickles, lettuce, burger sauce
