Thinly slice the beef & place into a bowl. Marinate with cornstarch, chilli flakes, salt & light soy sauce. Set aside for 15 minutes.
Place the noodles in boiling water on medium-high heat. Allow it to soften a bit & then use tongs to break up the noodles. Boil as per package instructions or until soft. Drain excess water & set aside.
Add all the sauce ingredients to a bowl, mix well & set aside until ready to use.
Add the oil to a pot on medium-high heat. Once the oil is hot, add in the marinated beef. Spread it out & cook until it changes colour.
Add in ginger & garlic paste & the bean sprouts. Mix & sauté for 2 minutes.
Add in the cooked noodles & pour in the sauce that was made. Mix well & sauté for a minute to infuse flavours.
Turn off the heat & drizzle over some sesame oil. Garnish with chopped spring onions & enjoy!
