Marinate Chicken

  1. Combine oil, lime juice, chilies, adobo sauce, garlic powder, and salt.

  2. Add chicken and toss to coat.

  3. Marinate in refrigerator at least 2 hours or up to overnight.

Cook Chicken

  1. Cook chicken in a pan over medium-high heat for 5 minutes, stirring, until cooked through.

Prepare Rice

  1. Boil rice, water, and salt.

  2. Reduce heat, cover, and simmer 15-18 minutes until water is absorbed.

  3. Fluff rice, then toss with lime zest, lime juice, cilantro, and salt to taste.

Assemble Bowl

  1. Arrange rice and lettuce in bowls.

  2. Top with chicken, tomatoes, avocado, corn, black beans, and red onion.
