Sausage And Bean Soup With Pasta
  1. If using dried beans, soak in cold water for several hours or overnight, then simmer gently until soft.

  2. In a large pot, brown the sausage, then remove from the pot.

  3. Saute onion, carrot, and olive oil until soft, then add garlic and saute a bit longer.

  4. Add tomatoes, chicken broth, thyme, bay leaf, salt, pepper, drained beans, and sausage back to the pot.

  5. Simmer gently for about 30-45 minutes.

  6. If using dried beans, check for doneness; if needed, cook longer.

  7. Add pasta and cook uncovered until tender.

  8. Adjust seasoning and add more salt and pepper if needed.

  9. Serve with grated cheese and a drizzle of olive oil.
