If using dried beans, soak in cold water for several hours or overnight, then simmer gently until soft.
In a large pot, brown the sausage, then remove from the pot.
Saute onion, carrot, and olive oil until soft, then add garlic and saute a bit longer.
Add tomatoes, chicken broth, thyme, bay leaf, salt, pepper, drained beans, and sausage back to the pot.
Simmer gently for about 30-45 minutes.
If using dried beans, check for doneness; if needed, cook longer.
Add pasta and cook uncovered until tender.
Adjust seasoning and add more salt and pepper if needed.
Serve with grated cheese and a drizzle of olive oil.
