Mediterranean Sausage And Bean Soup
  1. Heat a little extra virgin olive oil and cut up the sausages into small chunks. Fry with the fennel seeds until brown (around 5 minutes) then remove

  2. Cook the soffritto (carrot, celery, onion) and garlic until soft (around 5 minutes)

  3. Add the Italian seasoning, chilli flakes, stock, tomatoes and water (fill the can just over half way)

  4. Simmer for around 10 minutes then add the beans and greens and simmer for another 2 minutes

  5. Season with salt and pepper if needed. Finish with more extra virgin olive oil, parmesan and serve with bread
