Season chicken with salt and pepper.
Heat a large soup pot over medium-high heat and add olive oil.
Add chicken skin side down and sear for 5 minutes. Turn over and cook for 2 minutes.
Transfer to a plate and set aside.
Lower heat to medium and add ginger, garlic, and onions and sauté until fragrant.
Add chicken back and add rice.
Season with fish sauce and mix.
Add hot water and turmeric powder. Mix and cover. Let it cook for 30 minutes until the chicken is cooked all the way through.
Garnish with hardboiled egg, chopped green onions, fried garlic, and calamansi juice or lemon juice, and enjoy while hot.
