Sticky Glazed Christmas Chicken ham substitute meat
  1. Mix marinade in a jug then pour over chicken in ziplock bag, marinate 24 hrs (minimum 3 hrs). If not using ziplock bag, increase marinade 50%, use a bowl and toss 2-3 times during marinade.

  2. Divide chicken and marinade between 2 trays lined with foil and paper. Bake 30 min at 180°C/350°F, baste, then bake a further 20-30 min, basting 2-3 times more as tray juices reduce to syrup. Switch tray positions at 50 min mark.

  3. Baste again just before serving. If pan juices are still watery at 50 min mark, remove chicken and return empty trays to oven to reduce to glaze.

  4. Cover plate with leafy greens, pile chicken on top, scatter with orange wedges or slices, and optional orange zest.
