Lemon Posset
  1. In a medium saucepan, combine the heavy cream and sugar.

  2. Heat over medium, stirring frequently, until the sugar has dissolved and the mixture just begins to simmer.

  3. Remove from heat and stir in the lemon juice.

  4. Pour the mixture into 4 small ramekins or glasses.

  5. Refrigerate for at least 2 hours, until set.
