Creamy Baked Gnocchi With Squash & Sausages
  1. Preheat your oven to 200ºC

  2. Peel and chop your squash into small cubes and halve your tomatoes

  3. Add squash and tomatoes to an oven proof baking dish with the herbs, a good drizzle of olive oil, salt and pepper

  4. Roast for 30 minutes until soft

  5. Add in the gnocchi and break the sausages into small pieces, removing the casing if using meat sausages

  6. Drizzle with a little more olive oil for extra crispness and roast for another 30 minutes

  7. Add in a heaped tablespoon of cream cheese and a splash of milk

  8. Give it a good stir until creamy and delicious, squishing up some of the tomatoes and squash

  9. Serve and enjoy
