Harriet's Pizza Dough
  1. Heat cup water 30 seconds in microwave

  2. Stir in yeast and sugar

  3. When nixture foams (about 5 minutes) stir in olive oil

  4. Put bread flour and salt in a large bowl.

  5. Make a well in center of flour & slowly add yeast mixing until dough ball is formed. Add more water if too dry.

  6. Turn onto a floured surface and knead with hands for 5 minutes

  7. Place dough in in lightly greased bowl, cover with towel, and place in warm place for 1 hour (e.g oven warmed to 110)

  8. Punch down dough, split into 2 balls. Store one in plastic bag in refrigerator for later use.

  9. Place remaining dough back in bowl & let rise for 15 minutes

  10. Turn out on floured surface & roll into circle, stretch the dough with you hands, roll flat. Optional form ridges on edge for thick edged crust

  11. Place dough on parchment paper on pizza paddle.

  12. Prick evenly with a fork.

  13. Add desired toppings.

  14. Slide pizza dough and parchment paper on pizza stone or on baking tray to cook at high heat until bottom crust is medium brown.

  15. Add sauce (I prefer pesto sauce, but tomato is possible)

This is a recipe from sister, she made grilled pizza cooked on a charcoal barbecue hanging on the back of her sailboat in the Caribbean when I visited on her in maybe 2009.
