Peel and chop the sweet potato into chunks and boil in salted water for 15–20 minutes until very soft.
Drain well and mash until smooth. Season with salt and pepper.
Spread the mashed sweet potato thinly and evenly over the base of a greased baking dish.
Whisk together the eggs and cottage cheese and salt and pepper.
Stir through the spring onions and cooked chorizo.
Pour the egg mixture over the sweet potato base.
Top with cherry tomatoes and cheese.
Bake for 20–25 minutes until set and golden.
Rest for 5 minutes before slicing
