Saute the onion, bell pepper, celery, and carrots in olive oil.
Add the minced garlic.
Season with salt and pepper.
Add the small head of green cabbage and put a lid on it for a few minutes to steam the vegetables.
Add the can of crushed tomatoes, can of diced tomatoes, and beef broth.
Add 2 cups of water and the Mrs. Dash seasoning.
Simmer until the vegetables are tender.
