Peel-a-pound Soup
  1. Saute the onion, bell pepper, celery, and carrots in olive oil.

  2. Add the minced garlic.

  3. Season with salt and pepper.

  4. Add the small head of green cabbage and put a lid on it for a few minutes to steam the vegetables.

  5. Add the can of crushed tomatoes, can of diced tomatoes, and beef broth.

  6. Add 2 cups of water and the Mrs. Dash seasoning.

  7. Simmer until the vegetables are tender.
