Preheat oven to 200°C.
In an oven-proof dish, add satay sauce, peanut butter, sesame oil, oyster sauce, sugar, salt & pepper, coconut milk, and stock. Stir to combine.
Chunk in onion, rice, and chicken. Stir so everything is coated, then scatter your veggies on top.
Cover with foil and bake for 45 minutes.
Remove foil, stir, and bake uncovered for 10–15 minutes to give the rice a little crisp.
Fluff, serve, and top with crushed peanuts and a squeeze of lime!
