Chia Seed Energy Balls
  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper and set aside.

  2. Combine oats, shredded coconut, chia seeds, chocolate chips, honey, peanut butter, and vanilla and mix together well.

  3. Scoop and roll into 2 tbsp size balls and place onto prepared baking sheet.

  4. Bake for 6 minutes, then rotate pan. Bake for additional 6 minutes and remove from the oven.

  5. Allow them to completely cool before removing from the pan and storing.
