Cook the noodles: Prepare noodles according to package instructions. Drain and set aside.
Cook the pork: In a large skillet, heat sesame oil over medium-high heat. Add ground pork and cook until browned, breaking it apart. Drain excess fat if needed.
Add aromatics and sauce: Stir in garlic, ginger, soy sauce, hoisin (if using), vinegar, and sriracha. Cook for 2–3 minutes until fragrant and well combined.
Add vegetables: Add cabbage and carrots to the skillet. Sauté for 3–4 minutes until just tender but still crisp. Stir in green onions.
Combine with noodles: Add cooked noodles to the skillet and toss everything together. Cook for 1–2 minutes until heated through and coated in sauce.
Serve and garnish: Serve hot, topped with sesame seeds, extra green onions, and chili flakes if desired.
