Chipotlesauce
In a food processor, place the yogurt, mayo, chipotle pepper, garlic, lime juice, olive oil, and honey. Add a generous pinch of salt and several grinds of pepper and blend until smooth. Season to taste with more salt and pepper.
Heat griddle, sear the fat cubes then toss in the meat. Sear until nicely cooked. Set aside.
Throw in your tortillas, toast a little on both sides.
Add mozzarella cheese, meat, onion, cilantro.
Add a generous amount of the chipotle sauce.
Fold and enjoy
