Add all base ingredients to a food processor and blend until a sticky dough forms.
Press evenly into a lined pan or silicone mold (ice cube trays work perfectly for bite-size pieces).
In a small bowl, melt coconut oil, then whisk in cocoa powder and honey until smooth.
Pour chocolate over the base and smooth out.
Sprinkle with flaky sea salt if desired.
Place in the freezer or fridge until set, then slice or pop out of molds.
