For the Chicken: Coat chicken thighs in oil and Cusos Tequila Lime seasoning. Air fry at 400°F for 12 minutes.
For the Potato: Poke holes in the potato. Wrap in a wet paper towel. Microwave for 8 minutes. Coat in oil + more seasoning. Air fry at 400°F for 10 minutes.
For the Street Corn Mix: Mix 1 can Del Monte street corn, 12 oz blended cottage cheese, 1 tbsp Chipotle Tabasco, 1 tbsp mayo, ⅓ cup chopped cilantro, 1 tbsp Tajin, 1 chopped jalapeño, and juice of 2 limes until creamy and combined.
Build: Slice open your potato, layer crema, season, add your chicken, then pile on the street corn mix.
