Cut your baby potatoes in half or bigger potatoes in pieces about an inch big
Add potatoes to a pot and just cover them with water. Add the baking soda and boil until fork tender - about 25 minutes from cold
While potatoes are boiling, preheat the oven to 425°F (or 375°F if your oven runs hot)
Strain the potatoes when they are fork tender but not falling apart and let them steam in the colander for about 10 minutes
In the pot or a bowl, add the oil, grated garlic, salt and pepper. Add the potatoes and toss lightly
Use an unlined sheet pan and place the potatoes cut side down
Bake for 15-20 minutes or until the bottoms are golden brown
