Fibre Full Fudgy Black Bean & Sweet Potato Brownies
  1. Preheat oven to 180°C and line a small 8×8 baking tin

  2. Add the black beans, sweet potato, eggs, maple syrup, vanilla, cacao powder and salt to a blender or food processor

  3. Blend until completely smooth and thick, no bean bits visible

  4. Add your flour & flaxseed, then blend again till combined

  5. Fold through ½ cup chocolate chips

  6. Spread into the prepared tin and smooth the top, sprinkle with extra chocolate chips

  7. Bake for 24–26 minutes, until just set. A skewer should come out clean

  8. Cool completely before slicing into squares and enjoy
