A New Orleans Style Recipe.

A Frank Davis original. It's called Frank's Baby Butter beans and Shrimp.

Which ever way you call it, it's delicious.

A simple recipe that tastes great.

    Ingredients:

INSTRUCTIONS:

BABY BUTTER BEANS PREP

3-5 hours before cooking, pick through and soak the baby butter beans.

Then drain and rinse once. Reserve for cooking.

SHRIMP AND SHRIMP STOCK PREP

Peel and devein the shrimp.

Add shrimp heads and shells and two tablespoons of Liquid Crab Boil to 10 cups of water to a stock pot and bring to a boil. Simmer for 1 hour with lid on.

In this stock, we used more crab boil.

Strain and reserve 8 cups of shrimp stock.

BUTTER BEANS FINALE

Begin cooking in a 6-8 quart pot. Fry down the bacon and reserve bacon bits.

In the bacon fat, add onions, celery, green onions and garlic. Sauté' until veggies are soft.

No need to brown onions. Add some olive oil if you don't have enough bacon fat.

Add in the thyme, basil and bay leaves along with the baby butter beans.

Now add your 8 cups of shrimp stock and bring that to a boil.

Reduce heat to a simmer and cook with lid on for 90 minutes. Stir Often!

When butter beans are almost done, add shrimp and simmer for anther 15 minutes

or until the shrimp and pink and tender.

It's really that easy. Seems like there's more prep than cooking.

But it's worth it!

This recipe was not one he cooked while we were on the air together but it probably was one he cooked many times before.

Chef's Note: I honestly did change only a couple of things from his original recipe.

I don't roast my shrimp heads and shells. I used only crab boil in the water.

But that's it. the rest is all Frank Davis!
