Medium-high heat, spray pan + cook ground meat
Add garlic + onion, cook until soft/translucent
Add miso paste, break it down into the meat
Add mirin to deglaze
Mix in dashi powder + monkfruit sugar
Set aside extra for future recipes
Pour in soy milk, mix over medium heat
Add noodles and cook while stirring
Garnish with egg, scallions, seaweed
Serve hot
