Amritsari Fried Fish
  1. Cut the fish into bite-sized or slightly larger pieces

  2. Ensure frozen fish is completely thawed and dry

  3. In a mortar, crush 7-8 garlic cloves, approximately 2 inches of ginger, and 4-5 green chilies until well crushed

  4. In a separate bowl, combine gram flour, rice flour, corn flour, and all powdered spices

  5. Add the ginger-garlic-chili paste to the flour mixture and squeeze lemon juice

  6. Mix everything well, adding a splash of water if the batter seems too dry

  7. Coat the fish pieces evenly with the batter mixture

  8. Heat oil in a deep pan until hot

  9. Reduce flame to medium-high and fry fish pieces for 5-6 minutes until golden brown and crispy

  10. Remove fried fish and sprinkle red chili powder, chaat masala, and black salt on top

  11. Serve with mint chutney or tamarind chutney
