Preheat the oven to 180°C.
Toss pre-cut vegetables into a baking tray, drizzle with extra virgin olive oil and balsamic vinegar. Season with salt & pepper.
Place the tray in the oven and cook for ~35-40 minutes or until golden and the tomatoes are bursting!
Remove garlic, squeeze out/chop cloves, and add back in. Add in the cooked gnocchi (and/or cooked protein) and stir to combine.
For the whipped ricotta, add the ricotta cheese, lemon zest, honey (optional), parmesan cheese and chili flakes to a blender and mix.
Serve with whipped ricotta, plus additional herbs and parmesan, if desired. Enjoy!
