Preheat oven to 400°F (200°C) and line a baking sheet with foil or parchment.
Mix the topping: In a small bowl, stir together breadcrumbs, olive oil or butter, garlic, scallions or parsley, salt, and pepper. It should look like damp sand.
Prepare salmon: Place salmon fillets skin-side down on the sheet. Pat dry with paper towels.
Add crust: Spoon the breadcrumb mixture on top of each fillet and press it lightly so it sticks.
Bake: 12–15 minutes, until the salmon flakes easily and the topping is golden.
Serve: Add a squeeze of lemon over each fillet.
