Soak the pitted Medjool dates in 1 cup of hot water until very soft (about 10–15 minutes)
Add the soaked dates with the soaking water into a blender
Add tomato paste, onion powder, garlic powder, sea salt, paprika, white pepper, cloves, and vinegar to the blender
Blend everything until completely smooth and ketchup-like
Pour the mixture into a pot and simmer on low heat for 10 minutes, stirring occasionally
Add ½ cup of water and stir, adjusting with more water if needed for desired thickness
Remove from heat and let it cool until it thickens
Transfer to a jar or squeeze bottle and refrigerate
