Mix together the milk, sourdough starter and honey in a large bowl
Add in the flour and salt. Using either your hands or hook attachment of your stand mixer, mix the dough until shaggy and no dry spots remain
Add in the softened butter and mix until well combined into the dough
Gently form the dough into a ball and place in the bowl, cover with a tea towel and let rest for 30 minutes
Perform a set of stretch and folds then cover and let sit another 30 minutes. Repeat this 2 more times
Allow the dough to rise at room temp 10-14 hours or until at least doubled in size
Dump the dough into the counter and stretch it into a rectangle. Roll it into a log away from you, then fold the ends under
Place the dough into a greased loaf pan, cover with damp towel and let rest 2-3 more hours
Bake the bread at 375F for 35-40 minutes
Spread butter over the top right out of the oven then let cool for 45 minutes before slicing
