  1. Bloom gelatine in water (combine and let sit 10 mins).

  2. Whisk egg whites until stiff, then add collagen, vanilla, and honey; whisk again until smooth.

  3. Gently heat the bloomed gelatine until melted, then pour it slowly into the egg mixture while whisking continuously.

  4. Continue whisking 2–3 mins until glossy and thickened.

  5. Pour into a lined dish and refrigerate until set (at least 30 mins).

  6. Cut into pieces and enjoy 1–2 about an hour before bed.
