  4. Prepare onion and tomato mixture by combining sliced red onion, cherry tomatoes, lime juice, and salt

  5. Make mayo spread by mixing vegan mayo, dijon mustard, chilli oil, and salt if needed

  6. Assemble wraps by spreading mayo on wrap, adding baby spinach, grilled mushrooms, chimichurri sauce, and onion-tomato mixture

  7. Roll and serve
