Chicken Coleslaw Salad with Ginger Sesame Dressing
  1. In a large mixing bowl, combine the shredded chicken, green cabbage, carrots, red cabbage, green onions, and cilantro (if using). Toss gently to mix all the ingredients evenly.

  2. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey or maple syrup, grated ginger, minced garlic, salt, and pepper until well combined.

  3. Pour the ginger sesame dressing over the salad mixture. Toss everything together until the salad is well coated with the dressing.

  4. If using, sprinkle sliced almonds on top for added crunch and flavor. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
