Ooey-gooey Lemon Rhubarb Skillet Cake (one-pan Wonder)
  1. Preheat oven to 350°F (175°C). Butter a small cast-iron skillet or cake pan.

  2. In a large bowl, cream butter and sugar. Add eggs, yogurt, lemon juice/zest, and vanilla. Mix well.

  3. Stir in flour, baking powder, and salt until just combined.

  4. Fold in rhubarb, pour into the skillet, and smooth the top.

  5. Bake for 30–35 minutes or until golden and set in the center. Serve warm with a scoop of vanilla ice cream!
